Avocados

This deliciously creamy superfood fruit is an awesome way to add a healthy monounsaturated fat to your meal or snack – we’ve all heard of avocado toast. Avocados improve your cholesterol and decrease the amount of triglycerides in your blood. They also make a great topper to buddha bowls or a yummy salmon dish. Here is a light, healthy, no-cook required summer salad idea.

Light Summer Salad

Ingredients:

  • Grape tomatoes
  • 1 Cucumber
  • 1 avocado
  • 2 tbs of diced onion
  • 1 handful of minced parsley (2 tbs chopped)
  • 2 tbs olive oil
  • 1 tbs of red wine vinegar

Instructions:

  1. Pre-wash veggies
  2. Chop the cucumber, avocado, onion and parsley into a bowl
  3. Add the grape tomatoes to the bowl
  4. Drizzle the olive oil and vinegar
  5. (Option to add a protein source if you’d like)
