Ingredients:
1 pound butternut squash (precut, cubed)
1tbs Olive Oil
1 medium Vadalia onion, chopped
4 C Basic Chicken Stock
1 C Almond Milk
½ tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground nutmeg
In a large stockpot or Duch oven, heat olive oil over medium-high heat. Saute onion and squash for 5 minutes
Add stock and increase heat to high. Bring to boil, then reduce heat to low and summer for 45 minutes
In batches, puree squash mixture in blender or food processor and return to pot
Stir in almond milk, cinnamon, cloves and nutmeg
