Oh Gee, Ginger!
Some say it’s a stem, some say it’s a root, regardless, it’s fresh, sweet tasting and an anti inflammatory that aids in digestion. It contains 6-gingerol and that has been shown to stop the growth of colon cancer cells! Whether you refer to it as a root or stem, this little guy is your friend. Sip on some ginger tea or add it to a juice to support healthy digestion, eat some after dinner to cleanse the palette or add it to a dish to boost your overall health. Here is a warm cozy Carrot Soup recipe to try.
Ingredients:
- 1 tbsp olive oil
- 1 minced onion
- 2 minced garlic cloves
- 2 tbsp minced ginger
- 1 lbs of carrots peeled and chopped
- 2 c of vegetable broth
- ¼ c of coconut milk
- 1 tbsp of lemon juice
- 1 tsp of maple syrup
- Salt and pepper to taste
Instructions:
- Heat a large pot with Olive oil and saute onion, garlic and ginger for 5 minutes
- Add carrots and saute for another 3 minutes, stirring occasionally
- Add the vegetable broth, pop on lid and let simmer for 15 minutes
- Blend the soup either in a blender or using an immersion blender.
- Add the coconut milk and blend a bit more (Add the lemon juice, maple syrup and salt and pepper to taste)
