Corn on the Cob
How delicious is it to take a bit into some juicy corn on the cob in the summer heat? Mmmm
Corn is a great addition to summer BBQs. It’s high in vitamin C, folate and believe it or not, protein with 5g in 1 cup. It’s also loaded with lutein, which can help slow macular degeneration. Let’s get cooking!
Ingredients:
- 1/4c unsalted butter, softened (or your choice of vegan butter)
- 1 tbs chopped parsley
- 2 medium garlic cloves, minced
- 1 tsp rosemary
- 1 tsp thyme
- ¾ tsp salt
- ½ tsp black pepper
- 4 ears of corn, husks removed
Instructions:
- If you want to do this in the oven, set it to 425 degrees
- Stir together butter, parsley, garlic, rosemary, thyme, salt and pepper in a bowl until all is combined
- Spread about a tablespoon of herb butter on each cob
- Wrap each in aluminum foil and place on baking sheet
- Bake for 10 to 12 minutes, turn cob, then bake for another 10-12 minutes
