Artichokes
I remember when I was growing up my mom would add the ones that came from a jar in our salads and it was delicious! My Dad would steam in water for 15 minutes, then we would dip the leaves in melted butter. We’ll talk more about that in a bit.
First, let’s look at why these babies are good for our health.
USDA scientists found that artichokes have more antioxidants than any other vegetable they tested. They are rich in fiber and provide healthy doses of bone-building magnesium and potassium.
There are plenty of ways to consume artichokes:
- You can buy them in a jar, marinated in flavor and add to your salad or other dishes
- Steam, covered in a pot with an inch of water for about 20 minutes, or until the base can be pierced easily with the tip of a knife. Pull the petals out and dip into melted butter – be careful not to prick yourself
- Once you get to the base, or heart of the artichoke, slice the “hair” off and cut into chunks. I love to dip this part into butter as well, but you can toss with veggies and pasta or pile onto a grilled chicken sandwich
